Keto Chocolate Brownies

Decadent Keto Chocolate Brownies: Satisfy Your Sweet Cravings Guilt-Free! Keto treats! And at 1.6g carbs per piece, have two!

Ingredients

  • 3 large eggs
  • 120g erythritol
  • 100g butter, melted
  • 25g cocoa powder
  • 120g almond flour
  • 1 tsp baking powder
  • Pinch of sea salt or Himalayan pink salt
  • 2 to 3 tablespoons water, if needed

Ganache topping

  • 50g chopped 90% dark choc
  • 80ml double cream
  • 3 tablespoon powdered erythritol
  • 1/4 tsp vanilla extract
  • Desiccated coconut, unsweetened, to decorate

Method

Brownies

1. Pre heat your oven to 180º and line a deep sided baking tray
2. Mix your dry ingredients together
3. Whisk the eggs, butter together
4. Gradually add and combine the wet to dry ingredients (only adding a little water bit by bit if needed)
5. Mix to a smooth spreadable consistency, not too runny.

6. Spread out, in a lined deep baking tray. Bake for 25 to 30 mins until mixture is “set”
7. Let it the brownie mix cool in the tray for 10 minutes.

Ganache

1. Heat the cream in a pan, carefully
2. Remove cream from heat
3. Add chopped choc, allow to melt
4. Add powdered erythritol and vanilla extract and whisk it all together
5. Cover the cooled brownie mix with the ganache topping
6. pop in the fridge for an hour or so, until ganache sets
7. Cut in to 12 squares

*tip Don’t buy powdered erythritol. Just blitz your granules in a smoothie maker or coffee bean grinder.

1. For an even richer flavour, try adding a tablespoon of espresso powder to the batter. The coffee enhances the chocolatey taste without adding a noticeable coffee flavour.
